Shrimps in Tomato & Feta Cheese
A beloved coastal recipe with deeper flavour and elegant warmth.
Ingredients
400 g raw prawns, peeled
1 small onion, finely chopped
2 garlic cloves, minced
400 g chopped tomatoes
1 pinch saffron threads
80 g feta cheese, crumbled
Olive oil, salt, pepper
Fresh parsley or dill
Method
Infuse saffron in 2 tbsp warm water.
Sauté onion and garlic in olive oil until fragrant.
Add tomatoes and simmer 10 minutes.
Stir in saffron infusion, then add prawns and cook 3–4 minutes.
Top with feta and herbs. Serve warm with crusty bread.
It softens the acidity of tomato and enhances the sweetness of seafood, creating a beautifully balanced sauce.
