Greek Saffron Rice
Simple, fragrant, and deeply comforting — a staple side elevated with golden aroma.
Ingredients
1 cup long-grain rice
2 cups chicken or vegetable stock
1 small onion, finely chopped
2 tbsp olive oil
1 pinch saffron threads
Salt & pepper
Fresh parsley
Method
Soak saffron in 2 tbsp warm stock for 10 minutes.
Gently sauté onion in olive oil until soft.
Add rice and stir for 1 minute.
Pour in stock and saffron infusion. Simmer covered until tender.
Fluff, season, and finish with parsley.
