Υellow split peas – Greek Fava with Wild Olive Oil
Prep Time: 10 min – Cooking Time: 45 min – Serves: 4
Ingredients
250 g yellow split peas
1 small onion, chopped
750 ml water
1 bay leaf
1 tsp salt
60 ml Wild Olive Oil
Juice of 1⁄2 lemon
Optional: red onion or capers
Instructions
1. Rinse split peas well.
2. Place peas, onion, bay leaf, and water in a pot.
3. Bring to boil over medium-high heat.
4. Reduce to low heat and simmer for 40-45 minutes.
5. Remove bay leaf. Add salt and 40 ml Wild Olive Oil.
6. Blend until smooth.
7. Add lemon juice to taste.
8. Serve with 20 ml raw Wild Olive Oil on top.
